Belgian Squirrel Recipe
In this recipe, you will need at least 3 squirrels. They should already be gutted and skinned. Aside from that, prepare the necessary ingredients such as flour, pitted prunes, salt, pepper, dried thyme, vinegar, onions, and butter.

1. Start by cleaning the meat of the squirrel thoroughly. Cut it into cubes.

2. Preheat your oven to 175-degree Celsius.

3. Place a skillet in a medium heat and then melt the butter. Once the butter has melted, fry the meat of the squirrel until brown. This will probably take just 6 minutes. After frying add this on a big pot.

4. Add the onions on the skillet. Stir it from time to time until the onion is tender. Place the onion together with the remaining butter on the pot with a huge squirrel.

5. Mix water on the pot enough to cover the ingredients. Add the vinegar and the pepper, salt, and thyme. Cover this and then put inside the oven.

6. Bake it for at least an hour. After that, remove the pot from your oven and include the prunes. Return the pot to the oven and then bake it some more but reduce the temperature to 165-degrees Celsius. This should go on for about 45 minutes.

7. Transfer the prunes and the meat to a separate dish.

8. In a cup, mix flour and water. Place the pot in the stove and add the combined water and flour and stir it occasionally until you reached the desired consistency. Serve the squirrels with the gravy.

California Squirrel Legs
You probably don’t know that the leg of the squirrel has that meaty and tempting taste. In this recipe, you will need to prepare legs of squirrels, bacon, pepper, salt, all purpose flour, cornstarch, eggs, milk, onions, garlic, shallots, chicken stock, bay leaf, and fresh thyme.

1. Cook the strips of bacon and then put it aside. Do not remove the grease of the bacon on the skillet. While cooking the bacon, season the squirrel leg with pepper and salt.

2. Mix the flour and cornstarch inside the re-sealable bag. In a separate container, whisk the eggs and the milk. Place the squirrel inside the re-sealable bag and shake it. Dip it into the egg mixture and remove the excess eggs. Cover it again with flour then set it aside.

3. Remove at least 2 tbsp of bacon fats in the skillet. Cook the squirrel leg until it is golden brown. Reduce the heat and add the onions, shallots, and garlic. Put the chicken stock and allow it to simmer. Cook it until the meat is tender.
